Complicated Cocktails: Cantaloupe Calypso

A daiquiri doesn’t need to be all corn syrup and food coloring to be sweet and refreshing, even the slushy, frozen kind. Here’s a spin on the drive-thru favorite that you can blend up in the comfort of your own kitchen, without the chemical junk. Grab a summer cantaloupe and let your Vitamix fly. Tape a straw to your glass and enjoy!

  • 1/2 Medium Cantaloupe
  • 1/2 Cup Unsweetened Coconut Milk
  • 3/4 Cup of Tequila
  • 1/4 Cup of Fresh Lime Juice
  • 1/4 Cup Agave Nectar
  • Mint Sprigs and Lime Wheels for Garnish

Cut cantaloupe in half and remove seeds. Set aside half of the cantaloupe for later use. Slice the other cantaloupe half into wedges, slice off the rind then chop flesh into cubes and place in blender. Place unsweetened coconut milk, fresh lime juice, agave nectar, tequila and ice into the blender and blend until smooth. Fill a tall glass with ice, pour in cocktail and garnish with a lime wheel and sprigs of mint.
