Complicated Cocktails Friday: The Golden Fig

In my backyard, I have the largest fig tree I have ever seen. It towers over the house and every summer explodes with the sweetest fruit. The funny thing is, I don’t really like figs except in fig cakes. But I love figs in this cocktail! You will too.

Fig Puree

  • 2 cups fresh figs, stemmed and halved
  • 1 tbsp sugar
  • 2 tsp water
  • 1 tsp freshly squeezed lemon juice

Combine ingredients in a blender until smooth. Makes about a cup. Will last 2 days in a sealed container in the fridge.

Cocktail

  • 1 1/2 tbsp fig puree
  • 1/2 tsp honey
  • 2 oz ginger ale
  • 1 1/2 oz vodka
  • 2 tsp freshly squeezed lemon juice
  • ice

In a cocktail shaker, fill with ice then combine fig puree and honey. Add ginger ale, vodka, lemon juice and shake well. Strain into a chilled cocktail glass. Put two fresh fig halves on toothpicks for garnish.
